Right bank of the river “Serein”.
South facing on hillsides with 20% slope.
Altitude medium-size: between 140 and 165 m.
Aspect on the frozen springs: important.

VINEYARD: 
Density of plantation: 5700 feet per hectare.
Cut: double Guyot
Maximum yield: 55 hectolitres per hectare.
Upkeep of the grounds by ploughing and digging.
Organic culture only.

VINIFICATION:
Harvest in September.
Inflatable press, filling by gravity.
Complete vinification in 4 years old barrels from Burgundy.
Farmed on thin dregs. Filtered slightly on argile.
Combined using bentonite.
Lightly filtered on argile. No animal products.
Bottled 12 months after harvest.

TASTING:
Pale yellow appearance with green sheens.
Open nose with floral notes.
In the mouth, sharp attack with lots of delicacy marked by a taste of acacia.
Really good structure with grilled and honey notes.

Drinkable between 5 and 7 years. Wonderful with a grilled bar or a spiny lobster.
